Let's Do Something!<br />

Last night I was laying in bed wondering what I could do to help and it caused me quite a bit of sleeplessness. I thought back to all of the amazing childhood memories I made with my maternal grandparents, Ruth and Chuck Olson and it made me realize something... All of the fun activities we did, games we played and meals we cooked were extremely thrifty using mostly things you already have at home and we had a blast! Grandma Ruth was born in 1914 and Grandpa was born in 1909. They lived through the depression and were very thrifty and resourceful. I never realized until now that the time spent with them shaped who I am today and how I view things. I never told people that I used to have a blog because the things I do seem weird and old fashioned. This blog really is a tribute to the things my grandparents taught me in all the fun hours I spent with them. I plan on posting some of the things here over the next days that we did, because I think kids today would still enjoy some good old fashioned fun.<br />

Back to why I'm posting here... How can we help the world be a better place while practicing social distancing?<br />
1. You need some basic sewing skills for this first one, but I am going to make some cotton face masks to donate. You could argue the effectiveness of this endeavor but a cotton mask is better than no mask at all. Obviously they will be washed before use.<br />
2. Visit someone at the Lutheran Home from outside their window. My mom and I did this and it was really fun. It's not the same as a regular visit, but it is better than no visits at all.<br />
3. Take a meal to someone that could use a pick me up. I did this the other day. They were lasagnas that I made about a month ago, covered in several layers of foil and put in the freezer. I did NOT make these meals now, while the germs are flying. I also told the person to wipe down all of the foil with clorox wipes since I had just touched the packaging to deliver.<br />
4. Pastors Heather and Rich talk a lot about fasting to get in in better touch with your spirituality. This is not something I had ever really thought about before and it is going to be a tough one for me, but I'm going to try it for a day. What does it feel like for the people right now that aren't lucky enough to have a house stocked with food? What would happen to the overwhelming demand for food if we each fasted for just 1 day?<br />
5. Resist the urge to hoard. This is a super tough one but it is definitely the thing killing the supply chain.<br />
6. Be kind, especially on social media. We all have differing opinions and that is okay. What is not okay is to berate and demean someone else for having a different opinion than you. I don't personally know anyone that has changed their point of view from being berated on social media. I know for myself, it just makes me dig in deeper and hold an even stronger version of my already formed opinion. I keep my thoughts about it quiet and to myself, but I'm just being honest about what is going on in my mind.<br />
7. Stay away from people! It is killing me not to see my mom and in laws, but it is for the best. I did finally go to see my mom on Tuesday and it was a bad idea. Literally less than 2 hours after I saw her I found out that a passenger on Jamie's return flight from Ft. Lauderdale to Buffalo on the 13th was later diagnosed with Corona. It wasn't Jamie or any of his friends, but they are now self-quarantined until the 29th as a precaution. The bottom line is none of us know if we were exposed or not, so just stay home! He found out about it from the Buffalo news, several days later.<br />
8. Enjoy your family. Reassure your kids that things will eventually return to normal. Play board games, build blanket forts, and have family movie nights!<br />

So I got invited to a favorite things party. Say what? I had never heard of anything like that before. It was so much fun! You were to bring 3 of something that you love and you would go home with 3 different things. It was a blast.<br />

Thing is, I couldn't give an empty lunch bag, so I packed lunch in it. What would my favorite things be for lunch if I could take anything I want and not get fired from teaching? Glad you asked... A bottle of wine from our local winery, and treats from our local Sweet Shoppe. Doesn't that sound like the perfect lunch? I think that the recipients really liked them. Who knows for sure because we all have different taste... The important thing is that it was a fun night out with some great ladies on a cold wintry night. <br />

On a side note - I make my bags much larger than the tutorial. You could carry a gallon of milk and then some in these bags, although that wouldn't be my beverage of choice! I made the medium size Noodlehead Open Wide Pouches for Christmas gifts to give at work. I was pleased with how they turned out and how well they were received. I put some candy, lip gloss and lotion so they weren't empty and so that the recipients would get the idea that they might be able to use them as makeup bags.<br />

I am not sure about all of the fabrics but the orange florals and matching fabric are from Denise Schmidts DS Quilts line at Joanns, the green/blue, yellow black, red/black and royal blue are mostly from my local fabric store, the pink/orange fabrics are Joel Dewberry, purple squirrels are Tula Pink and I have no idea where the teal/aqua/red came from - Joann's maybe?<br />

The funny thing is, I had been wanting to make a double zip pouch for a while and couldn't find a good tutorial or pattern. I even tried to come up with my own (a zipper compartment within another zipper compartment) and was not happy with my results. This pattern is exactly the type of thing I had been trying to do on my own without any success.<br />

I have followed <a href="http://halfdozendaily.typepad.com/my-half-dozen-daily/" target="_blank">Carla's blog at My Half Dozen Daily </a>for a few years. She is such an inspiration. The lady can budget, cook and sew like nobody's business.<br />
I made this using her <a href="http://halfdozendaily.typepad.com/my-half-dozen-daily/2014/05/mothers-day-kitchen-aid-cover-tutorial-.html" target="_blank">mixer tutorial</a>. It was easier than I imagined it would be. I added jumbo ric rac not knowing if it would really work out or not. It fit perfectly into the bias trim that I made with 2 inch strips. The bias helped to keep the ric rac straight. I then sewed on top of the ric rac, clase to the edge with orange thread to keep if from curling up over time. You can see I have a blue countertop and orange walls, so I thought the fabrics were a nice choice. They are DS Quilts from Joann fabrics.<br />

This is my new Brother 420 sewing machine and boy did I struggle with this decision! I ordered it last Saturday from amazon and it came on Tuesday. It is too soon to tell for sure, but I think I am in love. Many of the super cool sewing bloggers that I follow sew on high end mechanical Jukis or super expensive computerized Janomes, Berninas, etc. I have the means to buy what I want, but I am super practical and wanted to buy something that would not make me want to rip my hair out! Also, sewing is a hobby for me, not my job. Most of the sewing bloggers I follow are designers, authors or simply love to sew to supplement their income. All of these things are admirable and fantastic, but they are also things I am never going to do. <br />
My simple criteria - a machine that doesn't jam and have threads bunch up underneath the project, some cool stitches, a large throat area for big projects, and something without a huge learning curve. I picked this machine because I already own a brother. The parts are interchangeable and I understand my current machine which is a brother 6000. <br />

My 6000 was a great way to start 5 years ago, but I have put it through a beating. It would jam and make multiple thread nests when going through thick materials. I was hesitant because this was the same brand and not much more expensive but it had great reviews and I could always send it back if I needed to right? I wanted to have it for over a week before I go back to school so I would have time to try it out before going back to school in the fall. I have 6 days before I start work on Friday so I am going to play some more and I will let you know what I think then. I have already made a Kitchenaid cover and will put pictures up soon.<br />
This brings me to my to do list. I have a <a href="http://www.pinterest.com/tjjjrook/might-try-sooner-than-later/" target="_blank">Pinterest </a>board of things I would like to do sooner rather than later. I never seem to be able to finish a large to do list, there are always a couple of lone things that don't get done, which are then added to my next list. My trick is to put more things there than I know I have time to do and set a number of things to get done from the list. This gives me options and choices, which I need. In other words if I have a to do list with 5 things on it I will probably finish 3 or 4 because at least 1 of those 5 things won't sound interesting to me at the moment. BUT if I have a list of 8 or 9 things I would like to get done and set a goal of finishing 5, I will get 5 done. It sounds stupid, but I think it is because I have a choice. If I say I want to make a lunch bag, tote bag, wallet, car bag and cosmetic bag I won't finish because maybe I am just not in the mood to make the lunch bag, so only 4 of the five will get done. If my list is longer I can choose 5 things that I am in the mood to make and 5 will get done. Does anyone else have to trick themselves into getting things done, or are all of you just over achievers?<br />
My sewing goal is to get 5 of the 9 things on the board done before the first day of school with kids on August 26th. Do you want to know a little secret? That goal contains not 1, but 2 tricks!<br />
1. I really only want to get five things done...<br />
AND<br />
2. I really want to actually be done by our 1st teacher inservice day on August 22nd.<br />

One of my best friends recently celebrated her birthday. We don't normally exchange gifts, but she has had a rough year and I felt the need to do something. Sewing is a great stress reliever for me. I do it at my leisure and am not really interested in doing it to make money. I feel that making items to sell would put me on the pressure of a schedule and take some of the enjoyment out of my leisurely activity. I spend a good bit on fabric and supplies, but I feel that it is offset by the fact that I am making gifts for a fraction of what it would take to purchase a ready made gift. I think that people are very receptive to the items and are touched by the fact that I didn't just go out and purchase a ready made gift. <br />
I also feel that the prices I would need to charge to be fairly compensated for my time would make the items cost prohibitive to buy. I live in an economically depressed area of the country. I enjoy my hobby and I want to keep it that way, so sewing for leisure it is!<br />

My friend's daughter just graduated from high school and is headed to Penn State. This is what I gave her for a graduation gift. 1. Pick a room in your house and get rid of half of the stuff in it. Be ruthless. Don't save it for a yard sale, just get rid of it! This will bring you to a normal amount of stuff that will actually fit in the room.<br />
2. Once you have completed step 1, go back into the room and get rid of half of what remains. Take it out of your house, off your property and completely get rid of it!<br />
3. Now that you completed step 2 you have only 25% of what you started with in the room. It will now be easy to put away in an organized fashion!<br />
<br />
Repeat steps 1-3 for each room in your house. You will now be a minimalist with much more time for family, friends and hobbies and much less stress in your life! This might sound like a sarcastic post but I have been doing this all summer and it is very freeing... I have shifted to this thought - If my house burned down or blew away in a tornado, what would I really miss? For me the answer is "not much". Mostly photos and a few sentimental pieces. I made 2 more tablet pouches but only one is shown. The other was the same outside fabric with a royal blue zipper, red end tabs and royal blue print interior. So I needed a pouch for my medicine to keep in contained in my purse. I was diagnosed with asthma last week and was given 2 inhalers and an antibiotic for an ear infection. I needed a decent sized pouch and I knew fussy cutting the squirrels in this fabric would yield a pouch with good dimensions for my supplies. I love how they turned out! The one on the left has a bold, blue zipper and the one on the right has pale aqua. I had a friend that saw it and wanted one for someone, so that is why I made 2. That is the way my family prefers their soup. I cooked it in about 2 or 3 Tbsp. of olive oil until soft. When I went to return the rest of the veggies to the refrigerator a saw a sad little 8 oz. package of mushrooms so I chopped them up and threw them into the pot. The beauty is that my mushroom hater won't be able to pick them out from the chopped chicken, so I am safe and the mushrooms didn't get wasted!</div>

I added 6 cans of broth, 2 1/2 cups of water, pepper to taste and a little bouillon and let it gently boil a few minutes to make sure the veggies were tender. <br />

I then stirred the tortellini into the pot and removed it from the burner. There was enough residual heat for the tortellini to be fully cooked when I returned in 10 or 15 minutes. This step actually has nothing to do with frugality (that is just an added bonus) it has to do with not wanting the tortellini to turn to mush!<br />

This is the final result in my Tupperware 17 cup servalier bowl! It had to be close to 20 cups of soup when you count what I had for lunch in my red soup crock above.<br />

This recipe could be made much cheaper than I made it. I look to be realistically frugal, but still make things that my family enjoys with ingredients we love. For example, some people make their own broth and freeze it after roasting a turkey or chicken. Sometimes I get a great deal on packaged broth with coupons. That was not the case with the broth I used today. As I already mentioned, you could use a different pasta, my boys just happen love soup with tortellini. I will say though that my spinach was free after gas points at my local store and my chicken was bought on sale and I precooked it with onions and froze it for later use. This whole frugal, domestic path has to be what works for you and your family or you won't stick to it for the long haul. I often wish I could be more like some of the other bloggers I follow, but I have to do what works for me. Keep this is mind as you read other peoples blogs. There is not one clear way for us to do things. We are all at different places with career, income, lifestyle, age, debt (or debt freedom) and there isn't a one size fits all solution.<br />

Ok - the secret is out. I make lasagna on a large scale, but I do not make the sauce from scratch. The truth of the matter is my mother always used prepared sauce. It is what I grew up on, what I am used to and what I like. Of course, you can definitely make your own, but I don't.<br />
I am going to give you the rough amounts that I use to make 2 pans of lasagna that are 9x13 in size. I don't go by exact recipe amounts unless I am baking. That is just the way I learned to cook.<br />

For 2 9x13 pans:<br />

3 - 3.5 lbs. of ground beef - brown in a large skillet with 1 large onion, finely chopped<br />
Drain<br />
Add 4 cans of sauce (or your own homemade if you are a saint)!<br />
Add 1 or 2 Tbsp of white sugar and simmer on low. If it gets 2 thick, add a little water.<br />
<br />
Ricotta mixture - in a mixing bowl combine:<br />
16 oz of ricotta<br />
3 eggs<br />
salt, pepper and parmesan to taste<br />
Set aside.<br />

You also need<br />
9 cooked lasagna noodles per dish (18 total) - I always cook a few extra<br />
shredded mozzarella - 1-1.5 lbs per lasagna (2-3lbs total)<br />

Spray the bottom of each pan with pam and layer in the following order:<br />

3 noodles<br />
Ricotta (1/6 of the mixture-just eyeball it)<br />
Mozzarella<br />
Sauce<br />
3 noodles<br />

Mozzarella<br />

Sauce again (you need sauce between the last layer of ricotta and mozzarella)<br />

Each pan will have 3 layers of noodles, 3 layers of ricotta, 3 layers of mozzarella and 4 layers of sauce. Try and plan accordingly when you are dividing up the ingredients.<br />
I bake a thawed out lasagna, covered in foil, at 325 for about an hour and a half. The last 10-15 minutes I remove the foil so it browns a little bit. Let rest for 5-10 minutes before cutting.<br />

My mom went to work 2 days a week when I was in high school and I cooked, or at least started supper on those nights. I didn't mind at all and liked cooking right from the start. She was able to call me from her work and talk me through getting dinner started over the phone. As a result, it was more coaching by her verbally, than actually showing me. Perhaps that is why I don't really measure and just kind of make it work. You don't need to be a math teacher (like nerdy little me - lol) to figure out how to divide the ingredients up! Just run with it. If you are really concerned about having enough ingredients, buy a little extra mozzarella and a jar of extra sauce in case you need it. If you don't need it, you will still have it on hand for another meal.<br />
Cooking is individual. I used ground beef, you might make meatless or add sausage or a combination of meat. I add a little sugar to my sauce and you could skip that. I like the ricotta thinned with egg, you might like chunks of ricotta. Lasagna can be made a million different ways and still taste good. Tweak it to your taste.<br />

Frugal notes - try to stock up on ingredients when they are on sale or at least buy the cheese and sauce at a warehouse club in bulk. I bought 9 cans of sauce at 99 cents each, but had I picked it up the last time I was at Sam's club, I could have bought a jumbo container of sauce.<br />

Can you see how OCD I am from this picture of a shelf in my freezer? I have to have all Pyrex dishes with glass lids so they stack neatly. Honestly, it bugs me immensely that they are not all the same color. Buying those dishes actually has saved me a lot of money. A few years ago I had coupons for $3 off any Pyrex. Walmart had sets with a 9x9 and a 9x13 for about $15 less the $3 coupon and I invested in a few sets. I have used those dishes over and over for freezer meals which ends up being way cheaper than throw away pans from the dollar store over time. I would hate to go to all the trouble, use a flimsy foil pan and have a fiasco! You could also pick up dishes at a thrift store, but you aren't likely to find them with lids which saves on the need for foil.</div>

Do you know what is to the left of the Pyrex on the same shelf? Another freezer secret... Boneless, skinless chicken that was purchased on sale. I cut it into bite sized pieces sautéed it with onion and then portioned it into small freezer bags. Ready to go for a quick dinner on the fly. I do the same thing with ground beef. I buy it on sale and cook it with onion before I freeze it. You can make tacos in about 5 minutes with precooked ground beef and that is exactly what we did last night!</div>

I started by cutting 5 lbs of boneless skinless chicken into small pieces and cooking it with 2 chopped medium onions. I then added 5 jars of Alfredo sauce. It sounds like a lot, but remember this is for 3 dinners in a house with teenage boys. <br />

We are having an artic blast here in NW PA that might make Siberia shiver. It is not the kind of day where kids can go sledding riding to celebrate having the day off school. It leads to the question, what can we do on a snow day? Because of where we live, we go to school pretty much no matter what. It is a cultural thing here, strange but true. To have the day off is unheard of in my town.<br />
I am a teacher home for the day and my kids are high school boys that want to celebrate by playing video games, so I am going to focus on what people without small children can do to pass the time. I didn't spend hours thinking about this, I am just writing what pops into my head.<br />
Here we go!<br />
<br />
1. Make homemade soup and/or bread.<br />
2. Make a batch of freezer meals - I am making chicken penne pasta today and will make some extra for the freezer.<br />
3. Call your TV provider and ask for the cancellation department. You might be surprised at what they will do to try and retain you as a customer!<br />
4. Try and find XX number of items to toss or donate.<br />
5. If you have credit card debt, call and try to negotiate a lower interest rate.<br />
6. Make a meal plan based on what you have on hand, write a grocery list filling in what is needed to complete the menu and STICK TO THE LIST next time you go to the store.<br />
7. Go online and transfer some money from your checking to a savings account. How much might you have spent if you would have left the house instead of staying home today. Would you have gone to the movies, eaten out, etc.? Estimate an amount of money and transfer it! It would have been gone had you left the house and you would have figured out how to live without it, so transfer it to your savings!<br />
8. Watch a movie with your family at home.<br />
9. Play a board game.<br />
10. Make an appointment with a lawyer to start the process for a will if you don't have a will.<br />
11. Research term life insurance if you are underinsured.<br />
12. Find some blogs that will improve your life based on your interests and start following them. Make reading them a habit. Blogs have improved my life immensely! Finance, cooking, homemaking, freezer meals, sewing - anything that you are interested in. There is a wealth of information out there. Just be careful with finance! You want to read to improve your life, not to become a captive audience to someone that is trying to sell you something!<br />
13. Watch a few old episodes of Suze Orman on CNBC.com<br />
14. Organize a room - or start small and organize a couple of cupboards or junk drawers.<br />
15. Watch a youtube video that teaches you how to do something useful.<br />

The list can go on and on, but you get the idea. I decided to make a huge batch of lasagna for the freezer before I went back to work on the 2nd, so these photos are from the first. I made three 9x13 and one 9x9 for the freezer. The label maker showed that the last time I did this was 8-15-13, so I only need to do this a couple of times per year.<br />

Today I cooked a few different things. I found myself wanting to go to the grocery store and pick up something easy, but instead I just dug in and started cooking from what I had on hand to forget about running to the store. <br />
I started with ham and scalloped potatoes. I make it in a 9x13 pan because it is shallow and does not need to bake as long as a deep casserole dish. Turns out my sons had 2 friends over and they were going to be here when we ate so I made 2 pans. It was served around 1 o'clock with a side of corn. It was a good thing I made 2 pans because the boys were hungry. The leftovers went into the fridge. Son #2 had more around 7 when he returned from playing basketball and my husband takes leftovers to work for lunch. <br />
While the potatoes were baking I did a package of bacon in the oven on the other rack. It takes about 25 minutes to get done to our liking. I forgot to mention that I had also started dough in the bread machine for hoagie rolls. When the bacon was done, I put in a tray of 10 hoagie rolls for tomorrow. I then started on cheesy ham/bacon/corn chowder while the casseroles and bread were in the oven. This soup is a great deal of work and very heavy on the calories, but it is one of my kid's favorite soups. We only have it about twice a year because it should really be named heart attack in a bowl. I made a big batch of this as I wanted to take some to my husband's aunt as it is also her favorite. By the time the casseroles were done I had also finished the soup and rolls for tomorrow. We will have the chowder and hot sausage sandwiches. <br />
Truth is, it would have been much easier to run to the store but this helped put a dent into what we already have on hand. I will go to the store tomorrow because it is a big Sunday for coupons and I will also get some fresh produce and milk. I just came from the Annual Lucia festival at our local Lutheran Church. The festival is always followed by a small gathering with traditional sweet treats along with Korv (yummo) and pickled herring (yucko). It made me hungry for Korv so I stopped at the store on the way home and buy some even though this is supposed to be a light grocery shopping week!</div>

It has been a crazy summer and my Sew Every Day Plan was a disaster. So bad that I don't even really want to talk about it. Suffice it to say, it did not happen. Life has been crazy as far as my job goes and even though I was off for the summer, it still had a way of interfering. I can't really talk about it, but let's just say it has been very, very weird.<br />
Today was my first day back to work. It was a work in your classroom day to prepare for the kids coming. Monday is jammed full of meetings and Tuesday the kids start. It will be my 25th year of teaching (I guess I am getting old) and I still love being with the kids and trying to inspire them to love math.<br />
Tonight we just had some casseroles that I had frozen. I had an 8 by 8 dish of chicken penne pasta alfredo and an 8 by 8 dish of chicken stuffing casserole. My sons were hungry after golf practice and there wasn't much left to put in the fridge. What was left will be packed for someone's lunch. Speaking of school lunches, the quality has gone down and the prices have gone up, so I am going to try to pack 4 times a week, if not every day. Today I took a grilled chicken salad with sun dried tomato feta and lots of garden veggies.<br />
I will be glad to be back in a routine. I made a <a href="http://www.noodle-head.com/2009/08/gathered-clutch-pattern.html" target="_blank">noodlehead gathered</a> clutch a long time ago and it turned out really cute. At that time I cut out the pieces for 4 more and they have been sitting in my sewing room ever since. I pulled one out and finished it today. 3 more to go! They are fun but they take me a few hours to make. Maybe I am just slow! I did add a lot of details. It has a detachable wrist strap, a divider and 2 credit card pockets.<br />

Tuesday was the first day of my challenge and I made baby gifts. Unfortunately I forgot to take pictures before I gave the gift away. Wednesday and Friday I made 12 crayon rolls. 10 will go to church and 2 will go into my gift stash. That should restock the church quite well. Children that are visiting get a crayon roll and coloring book to keep.<br />

I hate to admit it, but I didn't sew on Thursday. Some crazy stuff was going on and my phone was ringing off the hook. I can see already that a week is not going to cut it for what I need to catch up on in the sewing room. I am going to extend it out until next Friday which will make it 10 days of sewing since I missed a day. I am having fun doing this.</div>
